Spiced Raw Almond Snackers

Yacon powder is the secret mild sweetener in this delightful raw snack. You can also use Yacon syrup for stronger flavor, or Mesquite powder for another, smoky/malty version. This snack satisfies, just sweet enough with some good kick from the cayenne pepper. It’s handy on the go, at parties, out hiking…tempting raw-curious friends…have fun! Other nuts may be tried or blended as you please, like brazils, pinyons, and filberts. Lower-fat nuts (<50%) like almonds may be best soaked overnight and re-dried 12 hours first, if you can.

 

INGREDIENTS:

2 cups raw almonds (or other favorite raw nuts)
2 tablespoons of Olive or Coconut oil, melted
2 tablespoons of Bright Earth Yacon Powder
1/4 teaspoon crushed Himalayan Salt
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper, or curry, or cardamom and cinnamon, or…

In a bowl, toss nuts and melted oil, making sure nuts are well coated. In a separate bowl, combine yacon powder, salt, spices, and mix well. Sprinkle spice mixture onto the nuts, and toss until oil is completely absorbed. Spread nuts in a single layer on one or two dehydrator sheets, warm to about 120 degrees for 4-6 hours. Makes…2 cups :’)
