Lucuma & Cacao Chip Ice Cream

In Peru, Lucuma is the number one selling ice cream flavor.  This delicious banana-based ice cream recipe goes perfect on your raw cake, or on it’s own.  Sit back in the sun on a hot day, and cool down to this dream-like dessert.


4 Organic Bananas, chopped small and frozen overnight
1 teaspoon of Vanilla Coconut Oil
1 cup of Raw Cacao Nibs
2 tablespoons Jerusalem Artichoke Syrup
3 Tablespoons Raw Lucuma Powder

Add frozen bananas and vanilla coconut oil to a food processor and process until mixture is soft & white.  Work quickly so the bananas don’t melt, otherwise they won’t cream the ice-cream-like texture.  Once the ice cream is made, mix in the rest of the ingredients with a spoon.  Serve immediately or return to freezer.
