Chia Seed Vanilla Pudding

Ingredientschia pudding with berries

2 cups fresh almond milk
2/3 cup fresh chia seeds
pinch of Himalayan Sea Salt
2 teaspoons Chef’s Grade Vanilla (ground vanilla beans)
sweeten to taste with stevia or raw honey

1 cup fresh berries (optional)

OTHER OPTIONS:
1/4 cup cacao powder for chocolate pudding
juice of one lemon and zest for lemon pudding

Blend all ingredients EXCEPT THE CHIA SEEDS in a blender for 1 minute and let stand for 30 minutes. Stir occasionally for a delicious tapioca style pudding. You can blend this mixture for a creamier pudding. Chill. Top with berries and serve.
