Gluten Free, Vegan, Raw Chocolate Cake

chocolate cake recipe with berriesTake this to your next party and delight everyone with this sugar free, gluten free, raw chocolate cake. It takes less than 5 minutes to make and is absolutely delicious! Dark, rich chocolate taste with a chewy, moist texture that is divine!

Fresh raspberries, blueberries, strawberries and kiwis. Any combination of these works fabulous; or pick your favorite one.

Add all ingredients in the cake recipe to a food processor. Blend until mixture turns to fine crumbles that stick together easily when pinched. DO NOT OVER BLEND or it turns into a sticky gooey ball! The magic about this cake is getting the mixture just to the point of sticking together when pinched– but still keep the powder from getting too sticky. This will give your cake the best texture which is light and chewy. Pour the crumbly mixture out onto a beautiful serving plate or onto small individual serving plates. With your hands, firmly press the cake into any shape and size you like. Then top with fresh berries and/or kiwis just before serving. This cake can be made several hours or even a day ahead of time. Enjoy!

Health Benefits of Raw Cacao

[sws_red_box box_size=”500″] HEALTH BENEFITS:

Raw cacao is an amazingly potent superfood due to it’s mineral content alone–when left in it’s raw form. Most cacao in the U.S. is processed–thereby earning the name “chocolate.”Most of the population has never experienced the true benefits of cacao because they are eating “chocolate”–not raw cacao.

Raw cacao has long been known to have an emotional effect on those who eat it. It has a powerful “energetic” quality which seems to attract people to it like a magnet due to it’s creamy delicious flavor and the emotions that it evokes in those who eat it. It has long been a belief of many ancient civilizations that cacao is a medicinal food that targets the heart. Today, modern science has been able to prove true this ancient intuition.

Antioxidants: cacao contains more antioxidants (polyphenols, catechins and epicatecetchins) than any one single food in the world. It contains more antioxidants than acai berries, blueberries, goji berries and pomegranate’s combined.

Magnesium: cacao is perhaps the number one source of total minerals, especially Magnesium, one of the most alkalizing minerals on earth, supporting the heart, brain, bones and muscles… It is used in hospitals to to treat cardiac patients and pregnant patients because it is required to relax muscle. 80% of all Americans are deficient in magnesium due to it’s depletion in the soil and the food supply.

“Magnesium is an essential mineral for staying healthy and is required for more than 300 biochemical reactions in the body. Multiple health benefits of magnesium include transmission of nerve impulses, body temperature regulation, detoxification, energy production, and the formation of healthy bones and teeth.” Newsmax, 2013

Mood Lifting: raw cacao is well known for it’s profound effect on mental well-being and mood. This is because cacao is extremely high in Phyenylethylamine (PEA), known as “the love” molecule.” PEA’s are a class of neurochemicals that are most abundant in the brain when falling in love and they play an important role in increasing mental focus and alertness. PEA’s found in foods are very heat sensitive and are destroyed in the roasting process. This is why to get the most out of your cacao–eat raw cacao products!

Iron: Cacao is also extremely high in iron providing 314% of the U.S. RDA for iron in a one ounce serving. Iron is essential for oxygenation of the blood and cells as it carries hemoglobin which transports oxygen in the blood. Cacao is also very high in chromium, manganese, zinc, copper, anandamide.

Raw Body Butter Recipe: Moisturizer

Cacao Butter

Melt cacao butter over a double boiler until liquid. Use while warm. Cacao butter hardens at room temperature.

Add coconut oil for a thinner consistency. Pour left over melted cacao butter into small cups and chill for later use.

Leave the butter bars near your sink to use after washing your hands…

massageThis is a wonderful moisturizer after a bath or shower to hydrate the skin and protect it from potential invasion from harmful bacteria by replacing the acid mantle which is removed by soaps.

Acai and Cancer

cancer research

In a recent study by the University of Florida with Professor Stephan Talcott, antioxidant extracts from acai berries were tested on their effect against cancer in a cell-culture model. The result? The acai extracts triggered 86% of the leukemia cells to self-destruct.

Acai has twice the amount of antioxidants as blueberries!

FACT: The acai (ah-sigh-EE) berry has proven its ability to be absorbed in the human body when consumed both as juice and pulp. That finding, by a team of Texas AgriLife Research scientists, was published in a recent issue of the Journal of Agricultural and Food Chemistry.

What Are Antioxidants

By Dr Ananya Mandal, MD

All living organisms utilize oxygen to metabolize and use the dietary nutrients in order to produce energy for survival. Oxygen thus is a vital component for living. Oxygen meditates chemical reactions that metabolize fats, proteins, and carbohydrates to produce energy.

Dark side of oxygen

While oxygen is one of the most essential components for living, it is also a double edged sword. Oxygen is a highly reactive atom that is capable of becoming part of potentially damaging molecules commonly called “free radicals.”antioxidants heart shaped

Free radicals
These free radicals are capable of attacking the healthy cells of the body. This may lead to damage, disease and severe disorders. Cell damage caused by free radicals appears to be a major contributor to aging and diseases like:

• cancer
• heart disease
• decline in brain function
• decline in immune system etc.

Overall, free radicals have been implicated in the pathogenesis of at least 50 diseases.

Since free radicals contain an unpaired electron they are unstable and reach out and capture electrons from other substances in order to neutralize themselves. This initially stabilizes the free radical but generates another in the process. Soon a chain reaction begins and thousands of free radical reactions can occur within a few seconds on the primary reaction.

Cacao Paste: A Chocolatier’s Dream Come True

Cacao beans contain very high amounts of healthy omega 6 fatty acids. The cacao butter is the solid fat that is totally separated from the bean: leaving cacao butter and cacao powder. The cacao powder is the fiber that remains when the fat is removed from the cacao bean. These two products combined together have historically been the foundation of making raw chocolate.

[sws_pullquote_left] Now, there is something new in the raw food world that makes making raw chocolate easier than ever! [/sws_pullquote_left]

Now, there is something new in the raw food world that makes making raw chocolate easier than ever! It is a much less “processed” raw food–as it does not go through as many steps when being made. chocolate stack

Cacao paste, is created when whole cacao beans are slowly ground into a creamy paste with all of the good healthy fats intact: the separation process has never occurred and is totally unnecessary, leaving one solid product that is essentially what we know of as raw “unsweetened chocolate.” Cacao paste simplifies the process of making raw chocolate because never again will you have to melt cacao butter and then add cacao powder to it. This is basically the raw foodists version of unsweetened chocolate. Our cacao paste is never heated above it’s melting temperature–so all of the pharmacological aspects of the plant including the enzymes are left intact for the maximum benefit to your health.

How Much Salt Do You Need?

waterProper hydration depends on the balance of water and salt in the body. Drinking more water without intaking more salt–can make you more dehydrated.

Salt is an essential nutrient in the diet of every mammal. If you have ever owned a horse or a cow–you know that you must offer them “free” salt: meaning that you let the animal control it’s intake. Humans also have the innate intelligence to regulate how much salt they need. We were designed that by the nature with a built in system just for this: including our taste buds and our cravings. If you crave salt–eat it. Your body will crave what your mind remembers as being salty. Beware of this trap if you have not made the full transition to real and raw foods, because you will crave processed foods that are salty, like potato chips. In other words–just because you crave potato chips–does not mean that you should eat more potato chips–it means that your body is wanting more salt.

Long ago, humans knew that a lack of salt could devastate entire populations. When tribes began to migrate, they did so along ancient Salt Trade Routes, to ensure they would never risk running out of salt. At that time, salt was used as currency because it was known to be so valuable and essential for life. The word “salary” came from the word salt.

Don’t be afraid of salt! Salt your food to taste! It is essential for the body and necessary for proper hydration. What happens if you eat too much salt? Simple, you will be thirsty. Drink more water! Listen to your body. It knows.

We are salt water creatures by nature. Our blood contains salt. If you are not eating processed food–you must add salt to your food. Use whole salts as the minerals are intact because they have not been processed out. Never use white table salt as it contains harmful chemicals and other substances. Himalayan Sea Salt has 84 natural minerals; it is much more than just sodium!

The Role Of Fat In Detoxing

Fat acts as a vehicle for transporting nutrients into the cells–and is required for the removal of toxins from the body through the lymphatic system and colon. When toxins build up in the body, the cells cannot communicate because they are cluttered with unwanted material. This break down in cellular communication underlies every disease process.

By eating pure, clean sources of fat, like coconut oil, you never have to feel hungry during cleansing or detoxification. Without fat added to your cleansing protocol–you might be left with toxins that are ready to go–but have no escort out of the body.

[sws_red_box box_size=”430″]Coconut oil is one of the cleanest, purest and healthiest fats available.[/sws_red_box]

Add a teaspoon of coconut oil to your superfood smoothies and feel the difference. You will be satisfied for hours after drinking your smoothie because the fat in your meal is what gives you a feeling of satiety and fullness after you eat. For weight loss and immune system system repair, up to three tablespoons a day may be required.

Cacao Secrets for Lovers Only

The human heart and mind seem to be drawn to this ancient bean–just as much as the flavor seeking tongue… This is no coincidence, as raw cacao has a profound effect on the body, mind and spirit…

Ancient cultures knew the secrets of cacao and revered the cacao bean for it’s many “magical” properties including those associated with human emotions: love and passion… It is well known for opening the heart chakra and uplifting the mood. Traditionally, cacao was always made into a sacred liquid beverage reserved for very special occasions, celebrations and rituals.

This phenomenon is explained by medical science by the significant quantities of tryptophan and PEA found in cacao. Tryptophan is a powerful mood enhancing essential amino acid which is crucial for for the production of serotonin, our primary neurotransmitter. Enhanced serotonin levels are associated with a decrease in feelings of anxiety and protects our neurological system from stress.woman covered in chocolate

Phyenylethylamine (PEA’s), known as “love molecules,” are a class of neurochemicals that are most abundant in the brain when we are falling in love. They play an important role in increasing mental focus and alertness. PEA’s are very heat sensitive and are destroyed by high heat. To get the most out of your cacao–eat it raw!

For Lover’s Only: Still today, lover’s give the gift of chocolate to one another to acknowledge their love… It is easy to make your own raw cacao elixir’s and celebrate your divine heart connection with your beloved.

Sensual Chocolate Body Spread: If you are feeling adventurous you can make a luscious chocolate body spread that is sweetened to taste with raw honey by simply melting cacao paste over a double boiler and adding honey until desired sweetness. Use this chocolate sauce to sweeten your lover’s skin before kissing. You can also use this same creation for dipping strawberries or other fresh fruit into before feeding your lover…

Massage Oil: Cacao butter is the perfect oil for a full body massage; leaving your lover’s skin baby soft with only the subtle smell of chocolate. When warmed slightly over a candle, cacao butter melt into a smooth, sensual delight…

Natural Sexual Lubricant: Cacao butter makes a wonderful natural sexual lubricant. Just melt and apply. Or you can pour the melted cacao butter into small round ice cube trays or other molds of choice and chill. Viola!

The History of Cacao

Raw cacao is the “unprocessed” form of what most people know of as modern day popular chocolate; and it is pronounced “CA-cow.” Unless the label reads “raw cacao”–it is the “processed” version of this ancient medicinal superfood and the beneficial properties have all been removed by the processing. In fact–processed chocolate is not at all a health food–rather it is detrimental to good health and should be avoided by anyone who is trying to achieve optimal wellness.

cacao pod in treeNot only is raw cacao extremely nutritious–it tastes much better than any processed chocolate having a much richer taste. Raw cacao has long been known to have an emotional effect on those who eat it. It has a powerful “energetic” quality which seems to attract people to it like a magnet. The human heart and mind seem to be drawn to this ancient bean–just as much as the flavor seeking tongue… This is no coincidence, as raw cacao has a marked physiological effect on feelings…

Ancient cultures knew this and revered the cacao bean for it’s many “magical” properties associated with human emotions. This is also why lover’s often give the gift of chocolate to one another. Raw cacao profoundly effects the brain chemistry due to it’s array of different compounds that evoke feelings of love, bliss and joy.

In ancient Mexico, cacao beans were highly valuable and were once used as currency instead of gold coins.

Ancient Aztecs called cacao “yollotleztli,” which means “heart blood” as they intuitively knew that cacao supported the heart. This wild and exotic superfood is believed to return us to a natural state of “feeling”–as opposed to “thinking.” In ancient Mexico, cacao beans were highly valuable and were once used as currency instead of gold coins.

Dutch chemist Coenraad Van Houten patented the now famous dutch chocolate processing of raw chocolate which still exists today, separating much the fat out of the cacao bean and leaving behind the cacao powder. Van Houton’s invention made it possible to develop large-scale manufacturing and distribution of cheap chocolate in powdered form.

This ancient health food was further corrupted when the European market introduced refined cane sugar to chocolate. This process led to demineralization by leaching minerals out of the body; contributing to metabolic disorders associated with blood sugar imbalances; dehydration and addiction.

It has long been believed that cacao is a medicinal food that targets the heart both emotionally and physiologically–today modern science is now able to prove that this is true.
