A great easy ‘gourmet’ breakfast or brunch treat, that takes a short cycle through the dehydrator instead of baking/frying, for much more satisfying rewards…garnish for an impressive spread or just grab and go! Multiply the recipe to keep some on hand in fridge or freezer.
INGREDIENTS (makes 4-6 8″ crepes)
2-3 ripe bananas
1/2 cup flaxseed, ground
1 Tbs Acai Berry Powder plus a dash of tart juice like orange or pineapple
1 tsp ginger spice
pinch Himalayan salt
Process in a food processor until you have a creamy batter. Take a heaping tablespoonful or the mixture and make circular crepes, spreading out thinly. Dry on the teflex sheet at 110-120 for an hour then flip over and continue drying for another hour. They may be ready now. If not, turn dryer down and continue drying until completely pliable and dry. Fill with a bit of your favorite fruit, and/or a touch of Raw Vanilla Coconut Oil, then top with a low-glycemic sweetener such as our Jerusalem Artichoke Syrup! Voila!
